Coconut Pumpkin Custard

This is a delicious custard for those who have a sweet tooth.

Ingredients:

  • 4 eggs
  • ¼ cup brown sugar, packed
  • ¼ cup white sugar
  • 1 cup coconut milk
  • 1 cup pie pumpkin filling

Procedure:

  1. Preheat oven to 350.
  2. In deep bowl, beat eggs thoroughly
  3. Add sugars, stir until dissolved.
  4. Stir in milk and pumpkin.
  5. Pour into 9 x 9-inch baking pan
  6. Bake 45-50 minutes until knife inserted in center is clean.

Serves 6
