Thai Stir-fry Asparagus
Stir fry fresh asparagus with red bell pepper and mushrooms.

A fine way to cook asparagus spears, cooks in minutes once the ingredients are assembled.

Ingredients:

  • 1 Bunch fresh asparagus
  • 1 Carrot, julienned
  • 1 Red bell pepper, seeded and sliced thinly
  • 2 Cup Bean sprouts
  • ¾ Cup mushrooms, sliced
  • 1 Green onion, cut into 1-inch slices
  • 2 Tbsp healthy oil for stir frying

Stir-fry Sauce:

  • 1 Tbsp brown sugar
  • 3 Tbsp oyster sauce
  • 1 Tbsp fish sauce
  • 1 Tsp shrimp paste
  • 1 Small chili, seeded and chopped with kitchen gloves
  • 1 Tsp sesame oil (reserved for separate use)

Procedure:

  1. Snap the asparagus spears so only the tender 2 ½ tips remain
  2. Heat the oil in the wok and assemble by the burner the vegetables and sauce
  3. Add the asparagus and stir-fry for one minute
  4. Add carrot strips and mushrooms
  5. Stir fry till done, adding a bit of water rather than oil if the mix becomes dry
  6. Add green onions and Bell pepper, cook 1 minute
  7. Add the bean sprouts and sauce minus the sesame oil.
  8. When sprouts are heated through, drizzle the oil over the dish.
  9. Serve immediately over rice.

Serves 3-4, to extend the recipe add more asparagus.
